This is a quick video demonstration of how to setup your Weber Summit Kamado for cooking indirect at high heat with a Vortex. I answered this question during a podcast while talking about my setup for party wings. I love cooking wings with the Vortex because it’s easy to set the wings up around the perimeter of the grill while keeping the heat focused in the center. Coupled with the great insulation inside the Summit Kamado, the heat disperses evenly throughout the inside of the grill and it’s easy to keep the temperature at or above 350 degrees which is great for yielding bite through skin on the chicken.
